This is a yummy family dinner that everyone will like! The original name is Thai Chicken Salad, but I don't think the dish has any authentic thai origin. Cooking time is based on poaching chicken for one hour in a 350 F oven (salt and pepper breasts on both sides, and pour a little chicken broth or juice in the cooking pan, and cover lightly with foil).

  1. In a microwavable bowl, combine first 8 ingredients.
  2. Microwave on high for 1 minute.
  3. Mix sauce with chicken, peppers, and onions.
  4. Serve chicken salad in pita bread or tortillas with lettuce.
