MARINADE
- 59.14 ml coarsely chopped garlic
- 1 bunch cilantro, chop roots and lower stems reserve leaves for garnish
- 4.92 ml ground turmeric
- 4.92 ml curry powder
- 7.39 ml ground dried chile or 7.39 ml cayenne (or equivalent)
- 14.79 ml sugar
- 1.23 ml salt
- 44.37 ml Thai fish sauce (nam pla)

BASTING LIQUID
- 118.29 ml coconut milk (canned is ok)

DIPPING SAUCE
- 2.46 ml dried chili flakes or 2.46 ml cayenne
- 2 clove garlic, coarsely chopped
- 14.79 ml brown sugar
- 1.23 ml salt
- 118.29 ml chinese red rice vinegar
- 1 green onion, thinly sliced
- 14.79 ml coarsely chopped cilantro (leaves)
directions
- Process all marinade ingredients in a blender until smooth.
- Marinate chicken, refrigerated, overnight.
- Grill over hot coals until done, brushing frequently with coconut milk.
- Serve garnished with cilantro sprigs, accompanied by steamed rice and bowls of dipping sauce.
- DIPPING SAUCE: Pound first 4 ingredients to a paste with mortar and pestle, then dissolve in vinegar.
- Alternatively, put it all in a blender and blend until smooth.
- Float the green onions and cilantro on top.
