Ingredients Nutrition

  1. Preheat oven to 350 degrees.
  2. Heat oil in a large dutch oven or heavy-bottomed pot and saute onions for 4 minutes. Add ground beef and taco seasoning envelope and cook until beef is browned.
  3. Add Ragu Old World Style Organic Traditional Sauce along with the cumin, diced green chiles and black beans, stir to combine and cook for 5 minutes to combine flavors. Remove from heat.
  4. In a small bowl, blend softened cream cheese with the juice of two limes. Set aside.
  5. Add bag of corn and 1/2 cup of the green onions to the pot of sauce and stir well. Mix in tortellini and pour sauce and pasta into a 2 quart casserole dish that has been sprayed well with cooking spray.
  6. Dollop cream cheese on top of sauce and pasta and spread carefully to form a layer from edge to edge. Top with monterey jack cheese, then sprinkle olives and remaining 1/2 cup of green onions evenly over the casserole.
  7. Cover with foil and bake for 30 minutes, then uncover and bake until browned, an additional 20-30 minutes. Let sit at room temperature for 10-15 minutes to set.
  8. Sprinkle each serving with chopped cilantro and avocado, and serve with a lime wedge.
