TexMex Chicken for Slow Cooker

This is a flexible and easy chicken recipe that can be modified to your taste or ingredients you have on hand. I prefer to use 3 chicken breasts with 3 thighs. Depending on how spicy you like it, you can use mild, medium or hot tomatoes (the hot ones are VERY hot.) I use homemade taco seasoning from one of the several recipes found on this site instead of store bought. Sometimes I serve over cilantro lime rice, several recipes also found on this site.

  1. Place frozen chicken in bottom of slow cooker. You can use all breasts or all thighs or combination of both.
  2. Place all the dry seasonings and garlic in medium bowl.
  3. Add the tomatoes, beans, corn and chicken broth.
  4. Stir ingredients together. Pour over chicken breasts in slow cooker.
  5. Cook 3-4 hours on high or 6-7 hours on low.
  6. Before serving, shred chicken and stir ingredients together.
  7. Serve over hot cooked rice and top with fresh chopped cilantro or a sprinkle of dry cilantro, shredded cheese and sour cream if desired.
