  • In a large bowl, combine the first six ingredients.
  • In a small bowl, combine the salad dressing, lime juice and cumin.
  • Pour over the coleslaw and toss to coat.
  • Refrigerate until serving.

  2. This is a really unique flavor for slaw. My husband and I both really liked it. And the dressing is lite which we both like, as we both dislike a heavy mayonaise based dressing. I will definitely make this again.. It is definitely a keeper
     
  3. This was quick and great! Husband was raving, the kids both liked it - and I liked it and I almost never like slaw! I did leave out the mexicorn since I didn't have any on hand, but would add it next time for color. Thanks!
     
  4. This is such a great tasting and unique slaw. I really love the lime juice mixed in with the ranch dressing. It was crunchy, creamy, tangy and a little spicy, yum! However, there is no way that this would feed 8 people. I measured out 3 cups of slaw mix as recipe states and saw that it would not be enough. So I simply doubled the slaw mix, doubled the mexicorn and left the rest as stated. Even with that, there was plenty of dressing to cover the slaw. I think it would serve 8 small servings with my adjustments.
