A great little recipe I picked up at my local grocery store.

  1. Combine ground chicken, green onions, zucchini, carrot, chili powder, salt, cumin, and ground red pepper just until well blended but not overmixed.
  2. On waxed paper, shape ground chicken mixture into four 3 1/2 inch patties, handling meat as little as possible.
  3. Spray a 12-inch skillet with cooking spray and heat over medium-high heat until very hot.
  4. Place patties in skillet and cook about 6 minutes on each side or until no longer pink inside.
  5. These are great cooked outside on the grill too!

I love these! I have made them a couple of times. I shred all of my veggies for it in my food processor. I also freeze the extra individual patties on wax paper to have a quick meal another time as my kids unfortunately do not love them.

I haven't tried this yet but we are starting our healthy eating this weekend and camping to boot so I think this will be a good recipe to try. I'll post more of a review after we try it.

I made this exactly as written. I did not have to add anything to bind them. I pan fried them and did not have any problems with them falling apart. Served on buns with lettuce, tomato, etc.. Thanks for the recipe!
