- 425.24 g can artichokes, drained and quartered
- 425.24 g can cut green beans, drained
- 425.24 g can corn, low sodium
- 425.24 g can white beans
- 2 stalk celery, large dice
- 1 carrot, large dice
- 3 green onions, use only 1/2 the green
- 1 sweet pepper, color of your choice, medium dice
- 1 cucumber, seeds removed, medium dice
- 236.59 ml grape tomatoes, halved
- 1 lime, juice of
- 1.23-2.46 ml crushed red pepper flakes
- 2.46-4.92 ml cumin
- 59.14 ml cilantro, fresh
- 44.37 ml olive oil
- salt and pepper (I often do not use)
- 14.79-29.58 ml cider vinegar
directions
- Mix all ingredients together, chill a couple of hours, enjoy with tortilla or corn chips.
