I had a daycare client bring me a batch of this and just LOVE it.
- 1 (1 ounce) packet Italian salad dressing mix
- 1⁄3 cup canola oil
- 4 ounces salsa
- 2 avocados, diced
- 2 tomatoes, diced
- 1⁄2 red onion, diced
- 1 (5 ounce) can mexicorn, drained
- 1 (14 1/2 ounce) can black beans, rinsed and drained
- Mix all ingredients and refrigerate minimum of 3-4 hours. Serve with corn chips. "Cooking time" below is refrigeration.
