Texas Caviar

"This is a very simple Texas caviar recipe (we've had it in our recipe drawer for ages... it's typed on a yellowed piece of paper with an old-school typewriter!)."

ingredients

• 2 (15 1/2 ounce) cans black-eyed peas
• 1 teaspoon garlic, minced
• 1 bunch cilantro, chopped
• 1 cup green olives, chopped
• 1 onion, chopped
• 1⁄4 cup olive oil
• 2 fresh tomatoes, chopped
• 3 teaspoons vinegar
• 2 teaspoons lime juice
• 1 dash salt
• 1 dash pepper

directions

1. Mix all ingredients in a bowl and serve with blue corn chips (although in our family we prefer to eat it on crispbread crackers)!
