Texas Beans in Twenty Minutes

Yummy bean side dish that tastes great and cooks up fast! I got this from the Texas Beef Council, cuz ya know we raise cattle! :) BUT of course I had to play with it and change it up a little. I used turkey bacon in here but you can use any bacon you like, even fake bacon to make this vegetarian. Enjoy!

This was really quick and pretty healthy. We enjoyed them over top of some baked potatoes and it made for a really tasty and easy meal. I was happy to see the turkey bacon in the recipe and it worked well. The only reason I am giving four instead of five stars is that my partner commented that they were ever so slightly too sweet but I thought they were fine. That was probably down to the brand of BBQ sauce rather than the recipe. Made for PAC Spring 2008.

  1. Spray a skillet really well with cooking spray (or add a little veg oil) and saute chopped turkey bacon* or soy bacon*, onion, bell pepper and garlic. Keep stirring so that it doesn't stick and everything gets cooked on all sides. About 3 to 5 minutes or until onion is tender.
  2. Stir in remaining ingredients, cover and cook 5 minutes or until heated through, stirring occasionally.
  3. Serve!
  4. *Note: If you choose to use regular bacon cook it first and then drain and crumble. Pour off any grease from the pan leaving a tiny bit to saute the veggies.
