- 29.58 ml olive oil
- 236.59 ml onion, chopped
- 236.59 ml green pepper, chopped
- 2 large garlic cloves, pressed
- 453.59 g lean stew meat, cut into 1/2-inch cubes
- 226.79 g loose hot Italian sausage
- 425.24 g can tomato puree
- 411.06 g can beef broth
- 295.73 ml water
- 170.09 g can tomato paste
- 113.39 g can diced green chilies
- 44.37 ml chili powder
- 7.39 ml ground cumin
- 4.92 ml salt
- 4.92 ml sugar
- 4.92 ml dried oregano leaves, crushed
- 0.61 ml cayenne pepper (optional)
- 425.24 g can pinto beans, rinsed and drained
- 425.24 g can kidney beans, rinsed and drained
directions
- In 6-quart saucepan, heat oil; saute onion, green pepper and garlic 3-4 minutes, or until tender.
- Add stew meat and sausage, stirring to crumble sausage; cook 5-6 minutes.
- Blend in tomato puree, broth, water, tomato paste, green chiles, chili powder, cumin, salt, sugar, oregano and cayenne pepper, if desired. Bring to a boil. Reduce heat; simmer uncovered 1 1/2 hours, stirring occasionally.
- Mix in beans. Cover and simmer and additional 30 minutes.

The most defining trait in my life is that I am a mother to two wonderful boys (Tyler, 20 and Zayden, 9). I live in the little college town of Selinsgrove, Pennsylvania. It is the most wonderful place to live as it's nestled in the Appalachian Mountains and along the beautiful Susquehanna River.
Seeing that we live in Central Pennsylvania, our family is also a bunch of HARDCORE Penn State Nittany Lion fans! We are...PENN STATE! I was lucky enough to be given tickets to see Joe Paterno win his 400th game as the head coach of the football team. I cried like I did when my children were born.
The other love of my life is cooking. I didn't really start trying to cook until I was 20, but believe me I have made up for lost time! I absolutely adore baking and I do it whenever I can. I love making Christmas cookies and I have begun hosting our extended families at our home for Thanksgiving and Easter dinners. So far so good.
