This is the quickest meal! And it is sooo good.
- 1 1⁄2 cups cubed, cooked chicken (, , leftovers are fine)
- 16 ounces salsa
- 1⁄2 cup chicken broth
- 1⁄2 cup chopped onion
- 1⁄2 cup chopped green pepper
- 1⁄4 cup sliced ripe olives
- 2 teaspoons chili powder
- 1 cup Minute Rice
- 3⁄4 cup shredded cheddar cheese
- Stir together, in dutch oven, first 7 ing.
- Bring to a boil.
- Stir in rice.
- Remove from heat.
- Sprinkle with cheese.
- Cover and let stand about 5 minutes or till rice is tender.
This was great! I changed/added a few things though, just some of my favorites and a cue from NurseDi. For the chicken, I used about 1 1/2 pounds cut up. (a pre-cooked breast) I cooked the rice separately, with part chicken broth and part water, then added it (I hate it when part of the rice gets cooked, and the rest doesn't) I ended up only putting half of the rice in it. I used probably a whole cut of onion (1/2 onion cut up) I added about 1 1/2 tablespoons of chili powder, a dash of cumin, and a dash of garlic powder. I only had chopped olives (which looked gross, so I only put in about 1 tablespoon, which was perfect) So, even though I changed a lot of stuff, it was great! Thanks for sharing!
This was a quick and easy meal for us. I played with the seasonings some and ended up increasing the chili powder to 1 1/2 tablespoons. I also added 1/2 teaspoon ground cumin and 1 teaspoon chopped garlic. We enjoyed it very much and it didn't take long to get on the table. Thanks bunches.
