This was great! I changed/added a few things though, just some of my favorites and a cue from NurseDi. For the chicken, I used about 1 1/2 pounds cut up. (a pre-cooked breast) I cooked the rice separately, with part chicken broth and part water, then added it (I hate it when part of the rice gets cooked, and the rest doesn't) I ended up only putting half of the rice in it. I used probably a whole cut of onion (1/2 onion cut up) I added about 1 1/2 tablespoons of chili powder, a dash of cumin, and a dash of garlic powder. I only had chopped olives (which looked gross, so I only put in about 1 tablespoon, which was perfect) So, even though I changed a lot of stuff, it was great! Thanks for sharing!

Directions

  1. Stir together, in dutch oven, first 7 ing.
  2. Bring to a boil.
  3. Stir in rice.
  4. Remove from heat.
  5. Sprinkle with cheese.
  6. Cover and let stand about 5 minutes or till rice is tender.
