  2. Ingredients.
  3. 2 tablespoons Canola Oil, divided.
  4. 1/4 cup onion, chopped.
  5. 1/4 green bell pepper, chopped.
  6. 1 cup baby spinach.
  7. 1/4 cup chorizo, cubed.
  8. 4 eggs.
  9. 1/8 cup 1% milk.
  10. 1/4 teaspoon garlic powder.
  11. 1/4 teaspoon paprika.
  12. black pepper.
  13. Heat 1 tablespoon of oil in a large pan.
  14. Add onion. Saute until translucent.
  15. Add green pepper. Saute for 2 minutes.
  16. Add chorizo and baby spinach. Saute for 2 minutes.
  17. Whisk together eggs and milk in a bowl.
  18. Add last tablespoon of oil to hot pan. Allow to heat. Pour in egg mixture.
  19. Add spices.
  20. Cook until eggs are desired firmness.
