Tex-Mex Black Bean and Smoked Sausage Casserole

  • Preheat oven to 350°F.
  • Drain and rinse beans.
  • Chop sausage.
  • Mix everything well in an ovenproof casserole dish.
  • Cover and bake for 1 hour.
  • Uncover and bake another 20-30 minutes.

  1. This was good, but unbalanced. Both my husband and I agreed that it had way too much meat for the amount of beans. That being said, my son really liked it. Everything in it was stuff that he liked. Beans, saushie (sausage) salsa. I used homemade hot salsa which was quite thick, 2 8 oz cans of tomato sauce (one of them was Mexican hot tomato sauce) and topped it with cheese, just because it sounded like it would be good. Served it with brown rice on the side. Next time, I would either cut back on the meat, or add more beans. This would also be good with some corn in it.
     
  2. I guess this recipe can evolve a little more. Very easy to make, just had to cook a while. Using things on hand, I substituted also. Only had 8oz of tomato sauce, so I used a can of Ro-Tel also and no salsa. It looked a little plain, so 1/2 way thru I added about a cup of instant rice. When finished cooking I put the lid back on. SO is not a fan of casseroles but I think he actually enjoyed this. I brought home the left overs and will make again.
