Super easy idea, but I am kind of picky about my eggs... and I don't think I like them baked. Now I know! But my husband loved it!

I made these as a OAMC breakfast for my husband. He stated they were very good and reheated wonderfully. I baked the eggs (step 3) and then let cool before I cut into pieces and froze in zip-top bags. I then placed the frozen egg mixture, and a tortilla in my husband's lunch box. He heated in the microwave for about 45 seconds in the bag before transferring to the tortilla and eating.
Easy and unique and very yummy. I liked how the egg mixture bakes into strips to place into the tortillas..how creative! This solves the problem of having all the salsa and sausage dripping out the ends...making this a perfect choice for on the go breakfasts.
