Looking for a different taste for your green beans? These are made with Roma beans (a flat Italian green bean), olive oil, garlic, oregano, onion and mushrooms. My mom used to make them all the time. I am guessing at the preparation and cook time.
- 1 quart roma beans
- 1 tablespoon olive oil
- 1⁄4 cup mushroom
- 1⁄4 cup chopped onion
- 1⁄8 teaspoon minced garlic
- 1⁄4 teaspoon oregano
- salt and pepper
- Cook beans in large pan of boiling water until done.
- Heat olive oil in medium sized skillet over medium heat.
- Add drained beans, mushrooms, onions, garlic, oregano, salt and pepper.
- Heat to desired temperature.
These were so good! Unfortunately, I had to make them without the mushrooms - the ones I bought went bad before I could use them. :( But they were so delicious! Thanks for a wonderful recipe!
Great use of those garden-fresh Italian beans. I had some roasted garlic on hand so I used that rather than minced garlic so my end result was a little "creamier" than it would have been otherwise. Simple and good.
This is a great green bean dish. Simple to make and very flavorful. I doubled the garlic because we are such garlic fans. Thanks for sharing this, Lindsey C. Can't wait to make it again.
