We really enjoyed this dish! Great recipe for leftover turkey. This makes a lot so there is enough for at least I think 3 servings. Next time I plan to double maybe triple the jalapeno's and add some mushrooms to the dish. This is a keeper. Thanks Valerie for posting.
My BF loves this pasta dish and so do I!!! I think this recipe makes plenty for 2...sometimes we even have a little leftover for a midnight snack... but not often. This pasta is easy to throw together once you prep all the ingredients. I always make sure to have everything right by the stove so I can go from one step to the next quickly and smoothly. I like to add a bit more jalapeno, just for a little more kick and also at least double the cilantro for the brightness it adds to the dish. Squeezing a little more lime juice over the top of the finished pasta really adds a little tang I think the dish needs so it is not so heavy... Really delicious and rich... great with some garlic bread and a salad!
Wonderful. I used shrimp this time instead of turkey. I also used fat-free half & half in order to reduce calories and fat. The lime wedges squeezed on the finished dish really makes the dish! I am saving in our "Tried & True" folder. We will be doing this one again soon. Thanks for posting.
This makes a very large portion (I think) which is enough for two. I didn't have a red onion on hand so used a sweet onion and substituted a yellow pear tomato for the romas, but otherwise followed the recipe. The tequila cream sauce is really good and I might use that on its own or with sausage rather than the turkey next time. Thanks for sharing.
