Tequila Marinade

"This came from Bon Appetit and is just superb!!! I can't stress how wonderful this marinade is!!! It originally calls to be a beef marinade, but I think would be good with pork or chicken, too."

  1. very tasty! since this makes a lot of marinade and i am cooking for two, i froze part of the marinade to be used at a later date. the only change i made was to add some chipotle hot sauce. even so, the marinade was not as potent as you might guess from the ingredients. it has a nice balanced flavor. i tried it on a small chuck roast and on chicken legs. since i do my prep cooking on the weekend, i let them marinate for several days. the roast came out nice and tender, but i liked this better on the chicken, as i think chicken's basic mild flavor picks up the seasonings better. next time i might add more chipotle. yum!
