This is a very light batter fried dish, lots of fun to make and eat.

Ingredients Nutrition

  • 10 mushrooms
  • 1 onion, cut in eighths
  • 1 lb shrimp, shelled and deveined
  • 1 eggplant, in chunks
  • any other vegetables, you like
  • batter

  • 1 egg yolk
  • 2 cups ice water
  • 1 pinch baking soda
  • 2 14 cups flour
  • 3 34 cups peanut oil
  • 14 cup sesame oil

Directions

  1. Beat egg with ice water, baking soda, add flour stirring - batter should be light.
  2. Heat oil to 350.
  3. Spear food, dip into batter, cook in oil, aprox. 2 minutes.

Really good, easy, fast, was perfect for us just as written--oh, I did add just a pinch of salt.....Used the battter on shrimp, eggplant, carrots, red pepper, zucchini, onions...made a lot of batter, I tossed the rest..

Tasted great once we got the right consistency. Had to cut back the flour to 2 cups and increase the water by 1/2 cup. Someone commented that it could have used a dash of salt. Other than that it was great. We used red and orange bell peppers, mushrooms, onion and carrots. Everyone enjoyed being able to create their own dinner to their taste.

Delicious, we really enjoyed this and so easy to do. I used Zucchini cut in chunks instead of eggplant. Also cut a sweet potato into small chunks, SOOooo good. Thank you Chia.
