      Beat eggs and water until frothy.

      Add flour and salt, mixing only until blended.

      Place in bowl of ice while using.

      Coat: cut carrots, eggplant, mushrooms, sweet potatoes, zucchini, califlower, shrimp, pork or chicken.

      Fry in hot (but not smoking) oil.

      I used your tempura batter recipe twice. once as written and then I added almost a quarter cup of cornstarch to the flour and mixed well. The eggs I use as large and so I used less water each time. Take the tablesoon method of measurement and convert it to a cup measurement. Saves time. It is a good recipe as written, the cornstarch makes the tempura coating a little lighter.
