Tempeh Sausage Crumbles

"From postpunkkitchen (theppk.com) Created by Isa- this recipe is all her. I put it here to share with you all. Use where ever you'd like to have vegetarian sausage crumbles, like in scrambled eggs or tofu or in pasta dishes. We enjoyed this on pizza, along with onions, olives, garlic and mushrooms. And no, you are not going to fool any meat eaters into thinking that this is meat sausage, but that's ok by me as I don't like the taste of meat sausage. Great veggie alternative and I like that it does not have the extra sodium and other preservatives that the store bought veggie sausages have."

  • In a saute pan, crumble the tempeh and add enough water to almost cover it.
  • Over high heat, steam the tempeh until most of the water is absorbed, about 15 minutes.
  • Drain the remaining water and add the rest of the ingredients and cook over medium heat, stirring occasionally, until lightly browned, about 10 minutes.

  2. this was fantastic - we followed this recipe for the tempeh, then simmered with some marinara sauce and served over spaghetti squash - even our 3-yr old cleaned his plate!
     
  3. I loved this recipe- I ended up eating half of the tempeh out of the pan while it was cooking but did end up saving some for my meal. Really, really easy and super delicious.
     
  4. We really enjoyed this! My husband is a sausgae lover and avoids all things soy, but ate this without complaint. He said he wouldn't mistake it for Italian sausage, but it was still good. That's high praise coming from him. Served with marinara over spaghetti and look forward to trying it as a pizza topping. Thanks for sharing the recipe!
     
  5. I must admit I was surprized by this recipe! It tastes wonderful and was easy to make! I am using it to make spaghetti tonight. My husband, a real meat eater, loved it!

<p>I live with my hubby and three feline children in Oakland by Lake Merritt. <br /> <br /> <br />My rating system: <br />5 stars if the recipe works without having to make changes (my own subs just for personal preference do not count) <br />*New Rule: If hubby says "mmmm" or "this is good" without me asking if he likes it, it automatically gets five stars <br />4 stars if the recipe needs a minimal amount of changing because the recipe does not work the way it was written or if overall it just didn't WOW me. <br />3 stars and below if the recipe just does not work or if the instructions are not written clearly enough to make it. <br /> <br />Please know that I will change your recipe to fit my diet. I mean no disrespect, but since I have to diet I have to do it. I refuse to limit myself to recipes that already fit my diet and like the challenge of changing already existing recipes to be healthier. I will leave out the oil, leave out or replace the cheese and milk with a non-dairy alternative, and use whole grains. I will also leave out meat and broth and choose vegetarian, low sodium versions/alternatives. I still rate recipes that I make these changes to. <br /> <br />But, if I use a recipe as inspiration only- meaning I got a great idea from it but changed it all around- I generally will not give any stars but will put a little note stating what I did. I love to give credit where credit is due. <br /> <br />I don't deduct stars if I personally do not like an ingredient in the recipe. I don't make recipes that I think that I won't like, which is why you will probably notice that most of my ratings are pretty high. I think it is silly that people choose to make recipes that include ingredients that they don't like then rate them poorly saying "I don't care for..."
