  • Peel Cassave, wash and cut fingersize pieces.
  • You can boil the cassave for 10 minutes if desired.
  • Rub cassave with garlic.
  • In a deep pan, heat oil.
  • Put pieces of cassave in oil until golden brown.
  • Strain and sprinkle with salt.

  1. Like yummy french fries - but better! They do not have the mushy, mealy consistency of fries made from potatoes. I always see these cassava roots in the store and am glad I finally had an excuse to buy one. Neither my husband or I like fried foods but we really enjoyed these, despite my overcooking them a bit. (I wouldn't make it as a fry cook.) Don't forget to cut off the stringy inedible part when you're cutting into pieces. We only boiled the pieces for five minutes, to where they were just soft enough to poke with a fork. I look forward to trying other recipes using cassava.
