Tegelese Tesmi is a traditional Eritrean recipe for a classic form of ghee or clarified butter flavoured with onion, garlic and ginger. It is often listed in in recipe ingredients and is a flavourful substitute for ghee or butter, such as in Kulu'wa (Eritrean Chopped Meat). Enjoy!
- 1 cup unsalted butter
- 1⁄2 cup water
- 2 small onions, shredded
- 2 garlic cloves, crushed
- 2 teaspoons ginger, shredded
- Put the butter and the water in a frying-pan and heat them until the butter has melted.
- Add the other ingredients and simmer the mixture on low for 30 minutes, until the mixture stops skimming and the butter is clear. Do NOT stir the mixture. Sieve the butter and allow to cool down in a well closed jam jar .
This butter will add a lot of flavor to whatever you use it for! I was pleasently surprised at how much the ginger came through. One word of advice: don't walk away for too long, it will burn! LOL! That was completely my fault :) Made for ZWT 7.
This is a very flavorful mixture. I could see this working well in rice or vegetable dishes as well as with meat. Thanks for posting! Made for ZWT Witchin Kitchen, Skim into Africa challenge.
