Something a little different for breakfast...or our favorite--breakfast for dinner.
- 8 ounces creamed corn
- 6 slices bacon, thick sliced
- 2 eggs, slightly beaten
- jalapeno pepper (optional)
- salt and pepper
- Cut bacon into bits and fry until crisp.
- Drain grease and pour in creamed corn.
- Heat corn and add eggs to the mixture and stir until eggs are cooked,.
- Salt and pepper to taste.
- Add chopped jalapeños if desired.
