Great for left over turkey after the holiday. Just boil turkey bones and use broth and meat for soup.
- 2 lbs turkey breast
- 8 cups water
- 1 cup carrot, diced
- 1 onion, medium minced
- 5 ounces shiitake mushrooms
- 1 cup celery, diced
- Boil turkey in water until cooked.
- Cool and shred meat then add carrots, onion, celery, mushrooms, garlic and thyme to shredded turkey and broth. Cook until vegetables are done.
- Add white vinegar before serving (vinegar acts as a flavor enhancer).
