Tasty Tuna Curry

"This is a really good sauce with an Indian flair to it. This is very good served with rice. We use a tikka paste in this sauce for flavor- you can get a jar at the supermarket or Indian stores. I prefer to use chunk light tuna in this dish, but any type of tuna can be used. Enjoy!"

• Yields: 1 sauce
• Serves: 4-6

ingredients

• 1 tablespoon tikka paste
• 1 onion, diced
• 1 red peppers or 1 green pepper, diced
• 1 plum tomato, diced
• 1⁄2 cup frozen spinach
• 1⁄2 cup canned chick-peas, drained
• 1 teaspoon garlic powder
• salt (to taste)
• 1⁄2 teaspoon turmeric powder
• 2 tablespoons olive oil
• 2 (6 ounce) cans tuna, drained
• 1 cup water

directions

1. Saute onion, peppers, and tikka paste in olive oil.
2. Add dried spices- saute till onion is cooked.
3. Add tomato, spinach, chickpeas and saute.
4. Add water, and bring to a boil.
5. Add tuna, and once again bring to a boil.
6. Add salt and pepper to taste.
