Tasty Pumpkin Soup

"This is a really tasty pumpkin soup that I put together the other day for my sister who loves pumpkin. It's pretty easy to make with great flavours that even my 8 year old son (who doesn't like pumpkin) enjoyed. My sister ate 3 big bowls and she's a small eater so it must be good. The only problem I'm going to have now is her requesting I make it for her all the time as she doesn't cook."

  • 3 kg butternut pumpkin, peeled and cubed
  • 1 12 liters vegetable stock (which I had on hand)
  • 60 g butter
  • 2 teaspoons curry powder
  • 1 large brown onion, minced
  • salt
  • pepper
  • 250 ml cream

directions

  • Melt butter, Add onion and curry powder and fry for 2 minutes to cook curry.
  • Add pumpkin to onion mix and stir till coated thoroughly with onion mix. Cook stirring every few minutes for 15 minutes.
  • Add stock to pumpkin and bring to boil then simmer gently for 20 minutes.
  • Puree soup in blender. Once all the soup is blended return to pot add cream and seasonings to taste and stir.
  • Enjoy!

My names rosina and I live in sydney, Australia.I am originally from New Zealand but my family moved here when I was only a baby, though we were back and forth between the two quiet a bit. I'm a stay at home mum with two beautiful children who i absolutely adore, even though sometimes I think I'll go insane! But, doesn't every parent have thier days? I have a son who's eight and a daughter who's two and a half. Even though theres a big gap between them they are really good together. My daughter follows my son around all the time and thinks she's as old as him and that his friends are hers! I've always enjoyed cooking from an early age and was always in my mothers way in the kitchen. My mum is a fantastic cook, which is where I get my love of cooking from. Theres nothing better for me then seeing people enjoy my cooking. I love throwing things together and seeing what I come up with. My children love helping out in the kitchen. My son loves chopping and stirring everything and it's so enjoyable watching him in the kitchen. I love to read when I get the chance and when I get started and find the book too good to put down I could finish it in about two days! I love autobiographies and just finished a book called "the bean patch" by Shirley Painter, which is an amazing story of survival and the human spirit. I recommend this book highly! I couldn't get enough of it. I haven't been at Recipezaar that long but I love it here! Zaar has the loveliest bunch of people you could meet and I hope to meet as much of them as I can. Everyone is so nice and willing to lend an ear or help out with anything that may arise. I am definately a Zaar addict and I say it proud!
