This salad is high in omega-3 fatty acids due to the flax oil. A great side dish to lucnh outside on a warm day.
- 1 lb beet, shredded
- 1⁄4 sweet onion, shredded
- 2 tablespoons flax seed oil
- 3 tablespoons lemon juice
- 3 tablespoons balsamic vinegar
- 1 tablespoon dill weed
- Mix beets and onion together.
- Toss dressing ingredients together and mix in with veggies.
- Ideally, chill for at least 2 hours before serving.
