Taste of Summer Caprese Melts

ingredients
- 6 slice sourdough bread (sandwich style)
- 14.79 ml olive oil
- 15 fresh basil leaves
- 6 slice fresh mozzarella cheese (1/4 inch thick)
- 2 large firm ripe tomatoes (sliced 1/4 inch thick)
- kosher salt
- fresh ground pepper
directions
- Brush each side of bread lightly with olive oil.
- Layer evenly with basil, tomato slices, mozzarella slices; sprinkle with salt and pepper.
- Make into sandwiches and broil or grill until cheese is evenly melted, turning to evenly melt cheese.
- Cook about two minutes on each side.
- Serve immediately.

I'm giving this 4 stars for the ease of prep and the absolute deliciousness of this recipe. I really needed a taste of summer, winter is getting quite old and tiresome, and this fit the bill completely. I don't think 1 tablespoon of olive oil is enough for six slices of bread....I used at least 1 T. on my sandwich alone! My problem with this recipe is the way it's written....all caps and lots of misspelled words. Those make it quite difficult to read and it would have gotten 5 from me if it not for those issues. Thanks Polly, great recipe....please drop the caps and check your spelling :)
