Taste of Summer Caprese Melts

"These are great any time of year, but with home grown basil and tomatoes they are so much better tasting! Grill or broil so that the bread is golden brown on each side."

  • Brush each side of bread lightly with olive oil.
  • Layer evenly with basil, tomato slices, mozzarella slices; sprinkle with salt and pepper.
  • Make into sandwiches and broil or grill until cheese is evenly melted, turning to evenly melt cheese.
  • Cook about two minutes on each side.
  • Serve immediately.

  4. I'm giving this 4 stars for the ease of prep and the absolute deliciousness of this recipe. I really needed a taste of summer, winter is getting quite old and tiresome, and this fit the bill completely. I don't think 1 tablespoon of olive oil is enough for six slices of bread....I used at least 1 T. on my sandwich alone! My problem with this recipe is the way it's written....all caps and lots of misspelled words. Those make it quite difficult to read and it would have gotten 5 from me if it not for those issues. Thanks Polly, great recipe....please drop the caps and check your spelling :)
