Caprese is one of my favorite salads and now I can have something a little heartier with the same great flavor! Love, love, love this simple recipe. I'm giving this 4 stars for the ease of prep and the absolute deliciousness of this recipe. I really needed a taste of summer, winter is getting quite old and tiresome, and this fit the bill completely. I don't think 1 tablespoon of olive oil is enough for six slices of bread....I used at least 1 T. on my sandwich alone! My problem with this recipe is the way it's written....all caps and lots of misspelled words. Those make it quite difficult to read and it would have gotten 5 from me if it not for those issues. Wonderful. Everyone needs to make this sandwich. It is so light and so refreshing and so flavorful... to die for. I had to have two! This is my new summer sandwich.
