- 1⁄2 cucumber, sliced
- 3 fresh tomatoes, sliced (roma or other small varieties work best)
- fresh pita bread
- 8 ounces feta cheese (whole, not crumbled)
- olive oil
- fresh basil, chopped
directions
- Cut the pita bread into wedges or small squares, about the size of the cucumber slices.
- Slice the cheese into small pieces to match the size of the bread.
- Onto each piece of bread, place a piece of cheese, slice of cucumber, slice of tomato.
- Once all assembly is completed, sprinkle chopped basil over the appetizers.
- Drizzle olive oil (sparingly) over all.
- Enjoy!

I liked these... and a very tasty lunch it made too. Stupid me bought some supermarket basil because my own basil plants were a little stripped bare.. and when it came time to put it on I couldn't find it anywhere! so used some coriander(cilantro) instead. Two hours later I found the basil, duh, So I will try this again with the basil next time. Please see my rating system: 4 stars for a tasty appy that should please any crowd or an easy healthy lunch. I'm a grandmother who loves having the grandkids around. My son is currently living with me (on a short term basis) so I get to see and spend time with his kids more than I ever had, and that's a great thing.
I love trying new recipes and since I have found RecipeZaar, the new dishes have been streaming. Sometimes I think the kids would prefer a little break, but until they speak up, it's something new for them about everytime they visit with us.
I don't consider myself a 'cook,' I can only follow recipes. To me a cook is someone who can come up with their own recipes and have success at it (like my daughter).
