"This is an appetizer that my daughter came up with. The name comes from the piTA bread and the feTA cheese ... TA's, It is so simple to make, yet very tasty. I have yet to serve it and not get rave reviews on it. I have guessed on the amounts since when we make it, it's always just based on how much I want to have ready. I'm sorry I can't be more specific on the amounts."

  • Cut the pita bread into wedges or small squares, about the size of the cucumber slices.
  • Slice the cheese into small pieces to match the size of the bread.
  • Onto each piece of bread, place a piece of cheese, slice of cucumber, slice of tomato.
  • Once all assembly is completed, sprinkle chopped basil over the appetizers.
  • Drizzle olive oil (sparingly) over all.
  • Enjoy!

  1. This made for a lovely, refreshing, summertime lunch that was enjoyed by everyone. I used some nicely ripe tomatoes and my favourite marinated feta and some lovely sweet basil to top it all off. Thanks for posting, this will definitely be made again.
     
  2. Pretty good-looked nice and fancy when I brought them out to my friends. It did take awhile to make them look so nice though-and I am not sure if the time was worth it.
     
  3. I liked these... and a very tasty lunch it made too. Stupid me bought some supermarket basil because my own basil plants were a little stripped bare.. and when it came time to put it on I couldn't find it anywhere! so used some coriander(cilantro) instead. Two hours later I found the basil, duh, So I will try this again with the basil next time. Please see my rating system: 4 stars for a tasty appy that should please any crowd or an easy healthy lunch. Thanks!

I'm a grandmother who loves having the grandkids around. My son is currently living with me (on a short term basis) so I get to see and spend time with his kids more than I ever had, and that's a great thing. I love trying new recipes and since I have found RecipeZaar, the new dishes have been streaming. Sometimes I think the kids would prefer a little break, but until they speak up, it's something new for them about everytime they visit with us. I don't consider myself a 'cook,' I can only follow recipes. To me a cook is someone who can come up with their own recipes and have success at it (like my daughter).
