Directions

  1. In 2-quart saucepan, combine flour, cornstarch and lemon juice.
  2. Stir until blended.
  3. Add crushed pineapple and juice, egg yolks and sugar, mix well.
  4. Cook over medium-high heat for 5-6 minutes, stirring constantly until mixture thickens.
  5. Boil 1 minute.
  6. Remove from heat and let cool 2-3 minutes.
  7. In medium size bowl with electric mixer at high speed, beat egg whites until stiff.
  8. Fold in pineapple mixture.
  9. Spoon into 8 sundae cups and chill.
  10. Garnish with cut pineapple sliced in half, if desired.
