  • In 2-quart saucepan, combine flour, cornstarch and lemon juice.
  • Stir until blended.
  • Add crushed pineapple and juice, egg yolks and sugar, mix well.
  • Cook over medium-high heat for 5-6 minutes, stirring constantly until mixture thickens.
  • Boil 1 minute.
  • Remove from heat and let cool 2-3 minutes.
  • In medium size bowl with electric mixer at high speed, beat egg whites until stiff.
  • Fold in pineapple mixture.
  • Spoon into 8 sundae cups and chill.
  • Garnish with cut pineapple sliced in half, if desired.

  1. I made this last night for a light, low-sugar, low-calorie dessert. It was enjoyed by all, but now I see that the pineapple and eggs were not included in the nutrition facts, so the calorie count is off. But it's only 1/4 cup of sugar for 8 servings, so what the heck. It's yummy and cream-like even though it contains no milk or cream. One problem: you must let the boiled custard cool to tepid - way more than 2-3 minutes - or the egg whites you fold in will "cook" slightly and you'll have little cotton balls of egg white throughout. I'm going to try this with other very ripe fruit and see if it works. Thanks Dreamgoddess.
