I made this last night for a light, low-sugar, low-calorie dessert. It was enjoyed by all, but now I see that the pineapple and eggs were not included in the nutrition facts, so the calorie count is off. But it's only 1/4 cup of sugar for 8 servings, so what the heck. It's yummy and cream-like even though it contains no milk or cream. One problem: you must let the boiled custard cool to tepid - way more than 2-3 minutes - or the egg whites you fold in will "cook" slightly and you'll have little cotton balls of egg white throughout. I'm going to try this with other very ripe fruit and see if it works. Thanks Dreamgoddess.
