Tarhana is a kind of Turkish tomato-onion based sourdough that's used in this traditional soup. We had this during our time spent in Turkey and it was delicious.

Directions

  1. Bring the water and olive oil to a boil.
  2. Add the tarhana and stir constantly for approximately 20 minutes.
  3. Add a little tomato paste and salt to taste.
  4. Serve with grated romano cheese and a little bit of butter in each bowl.

This is a great soup! my mother made it all the time when we were kids. If you want to jazz it up a bit, try taking any kind of bread, cutting it up into little cubes and sauteeing them in a goodly amount of butter in a large wok/frying pan...once they are crispy and well toasted, sprinkle them over the soup! I personally use crumbled feta cheese instead of romano, and if you really are daring try adding some fried sujouk to the soup :) Hope you enjoy it as much as I have!
