Tapioca Pudding (using Minute Tapioca)

"This is comfort food at its finest. I love it hot, I love it warm, but I absolutely adore it ice-cold from the refrigerator. Personally, I think it belongs in it's own food group. But perhaps I'm biased. :D Hmmm, I think I might need to go make some tapioca pudding after posting this recipe... DH loves it when I make this, and I like that I don't have to fuss with soaking the tapioca overnight. I never remember to do that... (P.S. Decisions, decisions...they want to know how many servings? I suppose I should say something other than one, huh? LOL)"

directions

  • Mix sugar, tapioca, milk and egg in a saucepan, let set 5 minutes.
  • Cook on medium heat, stirring constantly, til mixture comes to a full boil.
  • Remove from heat, then stir in vanilla.
  • Cool 20 minutes, then stir.
  • Serve warm or cold.

  1. I love tapioca pudding! When I was a kid my mom used to make it the old fashioned way and let the tapioca pearls soak overnight. It was a time consuming process and I could never get mine to turn out like hers did so I thought I'd give this recipe a try. I couldn't wait for this to set up so I could enjoy some. I even tried it warm as you suggested (I had previously only had it cold) and I thought it was good that way too. This was such a treat. Thank's UC! :)
     
  2. The box says 1/3 cup sugar for that amount of milk and other ingredients in a single batch. It's too much work for 6 1/2 cup servings so I doubled the recipe, using 1 large can evaporated milk and 4 cups whole milk, double the rest of it, add a pinch of Kosher salt for good measure. It's cooling in 4-14 ounce white ramekins, and I like some film on top so no plastic. I scraped the pot and tasted; it's plenty of sugar (2/3 cup for DOUBLE batch), and I tend to like plenty. The tapioca comes out to about 1/3 cup when doubled. It takes awhile to stir until it boils like the instructions say, and I have an extra good pan for it, but with all the sugar and eggs added from the start, it didn't scorch and came to a full boil sooner than I thought it would on med to med-high heat (start just a tad on the high side then turn down to medium when starts to thicken). Hope this helps..
     
  3. I see you have had this site up for quite some time. I really love tapioca pudding better than any other kind My mom used to make this for the family when I was younger. I still do it occasionally. I have found that if you use 1/4 cup of instant tapioca instead of 3 Tablespoons, it thickens much better.
     
  4. Delish! I lost the instructions when I removed the tapioca from it's ugly box and stored it in a cute little jar. So glad I dropped into Food.com. Quick, easy and yummmmm
     
  5. Ohhhhhhh YUM :) This really hit the spot! Although unlike Elmotoo, it wasn't sweet enough for us, so next time I will increase the sugar. I also used half milk, half evaporated canned milk. It was delicious! Thanks!!!

Tweaks

  1. I added 1/8 teaspoon sea salt.
     
  2. Doubled using one can evaporated milk, 4 cups whole milk, and a pinch of Kosher salt. I also started just the milk and took the chill from the fridge off it before adding the rest and the 5-minute soak. Box recipe is at Kraft foods online.
     
  3. Delicious! Instead of vanilla extract I used vanilla bean paste and it turned out fantastic.
     
  4. Yep, this is a goody. I usually substitute half a teaspoon of cardamom for the vanilla when I make it and it is DEElicious. Even better the next day if you have leftovers.
