    This is comfort food at its finest. I love it hot, I love it warm, but I absolutely adore it ice-cold from the refrigerator. Personally, I think it belongs in it's own food group. But perhaps I'm biased. :D Hmmm, I think I might need to go make some tapioca pudding after posting this recipe... DH loves it when I make this, and I like that I don't have to fuss with soaking the tapioca overnight. I never remember to do that... (P.S. Decisions, decisions...they want to know how many servings? I suppose I should say something other than one, huh? LOL)

    Ingredients:

    Directions:

      Mix sugar, tapioca, milk and egg in a saucepan, let set 5 minutes.

      Cook on medium heat, stirring constantly, til mixture comes to a full boil.

      Remove from heat, then stir in vanilla.
    4. 4
      Cool 20 minutes, then stir.
    5. 5
      Serve warm or cold.

      Ohhhhhhh YUM :) This really hit the spot! Although unlike Elmotoo, it wasn't sweet enough for us, so next time I will increase the sugar. I also used half milk, half evaporated canned milk. It was delicious! Thanks!!!

      Perfect! it was a smidge sweet for my tastes. I loved that it was so fast & easy. I think I prefer the long cooking tapioca better but if you're short on time, this is THE way to go! I doubled this & still didn't get any. Thanks UC!

      Brought me straight back in time to my childhood!!!!!!! Absolutely LOOOVED it!!!!!! And it was actually very easy to make, too!!! Thanks so much!! Now I won't be scared anymore to make it homemade!!!! :)
