A perfect way to serve mashed potatoes without soaking them in fattening gravy!
- 2 lbs potatoes, peeled and cut into 3/4 pieces
- 1 cup nonfat plain yogurt
- 1⁄4 cup green onion, minced
- 1 tablespoon margarine
- Place potatoes in boiling water and cook until tender (about 20 minutes). Drain.
- In a bowl, combine potatoes, yogurt and margarine.
- Beat with electric mixer until fluffy.
- Mix in green onion; season with salt and pepper to taste.
- Serve hot.
