Yum! Really easy to make! Serve with toasted pita wedges...makes it a great appetizer or even meal!
- 2 cups cannellini beans
- 2 garlic cloves
- 1⁄4 cup lemon juice
- 1⁄4 cup extra virgin olive oil
- 3⁄4 teaspoon salt
chopped herbs to your taste
- fresh parsley (optional) or fresh rosemary (optional) or fresh thyme (optional)
- Puree all the ingredients in a food processor until smooth. Mix in fresh chopped herbs such as parsley, rosemary or thyme if you want. Serve on toasted pita wedges.
