This easy TOH mildly seasoned recipe I have made many times. I did reduce the number of servings to 6. :)

  1. Preheat oven to 350 degrees.
  2. In a skillet, brown ground beef; drain.
  3. Add tomatoes, onion, and spices.
  4. Simmer, uncovered, for 20 minutes.
  5. Arrange five tortillas in the bottom of a 13 X 9 X 2 inch baking dish, tearing tortillas as needed.
  6. Cover with half of the meat mixture, then half of the cheese.
  7. Repeat layers, using remaining tortillas, meat mixture and cheese.
  8. Sprinkle with olives.
  9. Bake at 350 degrees for 30 minutes or until heated through.
  10. Let stand a few minutes before serving.

This was quick to put together and a tasty lunch. I added some cumin and oregano to the meat mixture (and doubled the amount of chili powder) because I thought it needed more flavor. I used organic sprouted corn tortillas instead of flour tortillas, and used a shredded Mexican cheese blend. Very filling. I still thought it needed a bit more zing (maybe some green peppers or some more cumin/chili powder), but that is an easy adjustment to make to the meat mixture. Wow! We really enjoyed this pie. Serves 8? The three of us polished off at least 3/4 of the pan of Tamale Pie. I made a couple of small changes that I don't think diminished the taste of this recipe. I used ground turkey, instead of beef, to cut down on fat, and used one can of fire-roasted tomatoes in place of one of the cans of the stewed tomatoes....just using what I had on hand. Also, I used a four-cheese Mexican blend shredded cheese. This was very easy to put together and we enjoyed it with chopped Romaine and sour cream on the side. Thanks so much WiGal for this recipe, it will be made often in my house.
