A great way for Tex-Mex fans to start the day, or finish it. These are small and cook quickly. Serve 3 per person. Try spooning some meaty homemade chili on top.

  1. Preheat a griddle.
  2. Put cornmeal in a bowl, and add the boiling water.
  3. Stir well and allow to cool.
  4. Add the wet ingredients: milk, oil, and egg; stir.
  5. Sift in the dry ingredients: flour, cumin, salt, chili powder, baking powder.
  6. Add corn and olives; stir.
  7. Each pancake will be made from about 4 tablespoons of batter.
  8. Spoon onto the griddle and let cook, flipping once. Should be nice and golden brown on both sides.
  9. Top with your choice(s) from the tomato, cheddar, green onions, salsa and sour cream.

WONDERFUL!!!! The only substitute I made was black beans for the black olives and I used whole wheat flour. I ate the first 2 plain and then had then next 1 1/2 with cheddar. They were scrumptious. Fantastic recipe :)

I was looking for a way to use up some sloppy joe meat and this turned out to be a great choice! I lined a dish with a pancake, topped with the meat, cheese, salsa, and jalapenos. I also enjoyed one plain with cheese. Thanks Belkathy, for posting. Roxygirl

These are nice. We had them for lunch with sour cream and salsa. Just me I think, but I felt something was missing - probably a little more salt. Maybe if we had topped them with cheese they would have been fine. Thank you for sharing your recipe with us.
