      This is soooooo yummy! And it is very quick and easy to make! I did add just a teensy bit more of ice cream to mine (but I also like a lot of cream in my coffee) and that made it just right. The flavor is nice and creamy of course, and the dark rum works very well with the coffee, giving an "island" touch. This is so relaxing for cool nights, I will keep this recipe handy to have often!       Oh so delicious and decadent! I split the recipe in half and had one large serving all to myself. The only adjustment I made was using decaf. coffee, which made this beverage perfect for bedtime. The combination of flavors from the coffee, rum, cinnamon stick and vanilla ice cream are smooth and deserving of a "mmmm" after every sip. Thank you for a lovely treat!       This is sooo good. I love the flavour from the rum. I used a mixture of mango and coconut rum, It was all I had on hand. It worked really well. I will be making this quick and easy coffee often. I used frozen vanilla yogurt and garnished with whipped cream and ground cinnamon. Thanks for sharing Derf.
