Tacos in a Pan

"This is a quick one-dish meal. You can serve it as a dip with tortilla chips or as a filling for tacos or burritos. I substitute green onions for the green pepper. It is from Quick Cooking magazine and is credited to Tina Schaubroeck."

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
  • Stir in the beans, chilies and garlic powder; heat through.
  • Combine the sour cream, cumin and chili powder; spread over the beef mixture.
  • Top with tomato, olives and green pepper.
  • Sprinkle with cheese.
  • Serve with tortilla chips or taco shells, lettuce and salsa.

  1. This was very quick and simple. The kids had a great time putting their suppers together, I served it as soft taco filling.
     
  2. This dish is very fast and good. My husband had a small problem with the color of the sour cream mixture, but not enough to keep him from having seconds.
     
  3. I made this up on a hot day when I wasn't in the mood to cook for the kids. It came together quickly and the boys thought it was fun that we had a one bowl meal for dinner.
