Taco Won Ton's

- 1 lb lean ground beef
- 1 (1 1/4 ounce) packet taco seasoning
- 1⁄2 cup chunky salsa
- green onion, finely chopped (optional)
- 1⁄2 - 1 cup shredded low-fat Mexican cheese blend
- wonton wrapper
- oil (for frying)
directions
- Brown ground beef & drain.
- Add taco seasoning & salsa. Simmer for 5 minutes. Remove from heat & let cool. Refrigerate for 30 minutes (mixture is easier to work with after being refrigerated). Not necessary, but works for me.
- Add shredded cheese & green onion. Mix well.
- Lay out six wrappers at a time & keep the rest under a damp paper towel to prevent from drying out.
- Fill each wrapper with about a tablespoon of filling (don't overstuff).
- Dampen the edges of wrapper with water or egg wash. Fold over forming a triangle.
- Push out any air and pinch edges to properly seal.
- These may be frozen at this point. Lay on a tray in a single layer. Freeze. Then transfer to a freezer bag. When ready fry from frozen.
- Heat oil in deep fryer or can shallow fry in skillet until golden brown and crisp.
- Serve immediately with extra salsa & sour cream for dipping.

Well, it is all about me....I've been married to my amazing husband for three years. When I'm not experimenting with recipes at home, we love to dine at all the great restaurants here in Hawaii. We travel a lot between Maui and Oahu being we live and work on Oahu and most of our loved ones are on Maui. Whenever possible we try to get to the beach for our sunset barbeques. The picture posted was taken in front of his grandmother's beach house in Hau'ula. How lucky are we?
Update 02/06/08: My husband & I have relocated to Alabama. My military man is stationed at Ft. Rucker & attending flight school. Though we are soo far from our family & home I'm loving it here. I do miss the fresh island fish and the local farmer's market. It's been a challenge finding the ingrediants I'm used to using. I drive my DH crazy going store to store to find what I need. When it's all said & done and there is a delicious meal in front of him, he says it's all worth it! We have definately embraced the food of the south. It's a culinary adventure & I'm enjoying the ride.
