Taco Turkey Meatloaf

"Ground turkey makes this meatloaf lighter and healthier; cheese and taco seaoning make it delicious. From betterrecipes.com. Again altered even further for calorie and fat content. You might not be able to find whole wheat bread crumbs. I usually de-crust 1-2 slices of whole wheat bread and dry in the oven and then crumble. The last two ingerdients are for the topping. Easily halved or even cut into thirds."

  • Mix together eggs, taco seasoning, black pepper, onion, garlic, tomato sauce, brown rice, bread crumbs and cheese.
  • Add turkey and mix until thoroughly combined.
  • Grease sheet pan with Pam
  • Form two loaves of meat mixture on pan.
  • Top each loaf with tomato sauce and cheese.
  • Bake at 375 degrees for 1 1/4 hour or until meat thermometer registers 165 degrees.
  • Let rest for 5 minutes before slicing.

  2. We loved this recipe. I 1/2'd it and used salsa instead of tomato sauce, and 1 egg worth of egg whites. And because I was in a hurry I cooked it in my microwave steamer (shaped loaf in the part with the holes and put about 1/4 cup water in the bottom. All the fat and juice drained away and what was left was a wonderful meatloaf full of flavor...In my microwave it was cooked to perfection in 12 mins... Thanks for posting this Sarahbeth...   3. So this actually got some mixed reviews. I made a few changes and that may be some of the issue. I used taco flavored turkey burger so I didn't use the taco seasoning and that I think was an issue in flavor. I made everything else as is. It was way to moist and I had to drain off 1/2-1 cup of liquid. I will try this again as written except add more bread crumbs. Thanks for an interesting dinner.
