    ~SarahBeth~'s Note:

Ground turkey makes this meatloaf lighter and healthier; cheese and taco seaoning make it delicious. From betterrecipes.com. Again altered even further for calorie and fat content. You might not be able to find whole wheat bread crumbs. I usually de-crust 1-2 slices of whole wheat bread and dry in the oven and then crumble. The last two ingerdients are for the topping. Easily halved or even cut into thirds.

We loved this recipe. I 1/2'd it and used salsa instead of tomato sauce, and 1 egg worth of egg whites. And because I was in a hurry I cooked it in my microwave steamer (shaped loaf in the part with the holes and put about 1/4 cup water in the bottom. All the fat and juice drained away and what was left was a wonderful meatloaf full of flavor...In my microwave it was cooked to perfection in 12 mins... Thanks for posting this Sarahbeth... So this actually got some mixed reviews. I made a few changes and that may be some of the issue. I used taco flavored turkey burger so I didn't use the taco seasoning and that I think was an issue in flavor. I made everything else as is. It was way to moist and I had to drain off 1/2-1 cup of liquid. I will try this again as written except add more bread crumbs. Thanks for an interesting dinner.
