These were really good. I only had about 1/2 bag of tator tots that I needed to use up. I adjusted the other ingredients as needed. Didn't have the peppers, but they were still yummy. Hubby and I snarfed them down in no time.

Good side dish with Mexican food when you're tired of rice and beans. This also would be good just as a snack.

I simplified this recipe by omitting the olives, jalapenos and red peppers. I garnished it with green onions. It turned out great!!! Kids loved it and so did I.

Great for breakfast too! Use like hashbrowns. Either serve them on the side of some scrambled eggs, or mix cooked scrambled eggs into finished recipe! Easy recipe to make. I liked the peppers best because it created a small kick to it, not too much or overpowering, just enough to accent the flavor of the dish. Yummy cheese, taco, and potato flavor! Thanks for posting!

"Burp".....holy buckets this was a great recipe! The topping options for this are unlimited. I let the kids help make it. Very Kid Friendly recipe! Thanks for a great one!

hold on your tummy is in for a treat we had this for dinner tonight garnised with chopped tomatoes scallions and peppers and it was a real winner
