Quick and easy - kid pleasing - one dish dinner.
Like nacho dip on noodles. Could cut the cheddar to reduce fat. Also could add a can of Mexican spiced tomatoes and reduce or omit the water.
Cook onions and ground beef in large saute pan until beef is browned. Drain fat. Add taco seasoning, water and corn to beef mixture in pan; cook 1-2 minutes.

Add cream cheese and cheddar; cook until it heated through and cheese melts.
My husband declared this recipe a keeper. I didn't have the egg noodles, so subbed with linguini pasta, made a green pepper addition, along with an extra 1/2 cup of water to thin the sauce out just a bit. :)

I added one can of mild rotel tomatoes and chilies to give it a little extra zest but it was still missing a little something. Not bad though - I would make this again...

This was really, really good! I needed something quick and easy and lo and behold found this. My family gobbled it up in no time. I only had fettuccine noodles but it worked and still tasted yummy!
