Taco Spaghetti (OAMC)

"This recipe makes 2 casseroles. One to eat right away and 1 to freeze for future use. Of course, you can freeze both or eat both!"

directions

  • Cook pasta according to pkg directions, drain.
  • Meanwhile, cook ground meat and onion until meat is brown, in a dutch oven.
  • Drain off fat.
  • Stir in water and taco seasoning mix.
  • Bring to boiling and reduce heat.
  • Simmer, uncovered for 2 minutes, stirring occasionally.
  • Stir in cooked pasta, corn, 1 cup of the shredded cheese, salsa and chili peppers Divide mix evenly between 2 lightly greased 2 qt casseroles.
  • Package up, lable and freeze up to 3 months.
  • To serve remaining casserole, cover and bake in a 350F oven for 20-25 minutes or until heated through.
  • Sprinkle with remaining cheese.
  • Top with lettuce and chopped tomato.
  • If desired, pass broken tortilla chips and dairy sour cream as additional toppings.
  • To serve the 2nd casserole, thaw in the refrigerator overnight.
  • Bake, covered in a 375F oven for 1 hour or until heated through, stirring once about halfway through baking time.
  • Sprinkle with 1/2 cup shredded cheese.
  • Serve with 4 cups shredded lettuce and 1 medum tomato, chopped.

  1. This was REALLY good. We all had out doubts.....it doesn't look real colorful. I omitted ONE can of corn and substituted a can of whole black beans, just because corn is so high in carbs (bad for diabetics). I think, next time, I'll add some julianned red peppers to give it some more color. This actually was pretty low-carb, the spaghetti is not the most plentiful ingredient in this. Will definitely make again. Thanks!
     
  2. This was good. My guys didn't leave much. I used 12 oz of spaghetti and Mexican blend cheese. That's what I had on hand. I think that next time I'll use 1 cup of water and add more if I need to. It was a little juicy for my taste. I must admit I cooked it all in a big dutch oven. I'm feeding 2 teenage boy and a hungry man. lol Thanks for the recipe.
     
  3. The kids loved this. I did omit the green chilies & used taco sauce instead of salsa. I cut the recipe in half, but still used a full packet of taco seasoning. They ate it all with zero leftovers. Thanks!
     
  4. I made this last night and we liked it but it was kind of bland. Tonight I added another packet of taco seasoning, added about 1/2 cup more of salsa and had refried beans on the side. I also used taco sauce on top, YUMMMMMMYYYYYYYY!! So tonight we LOVED it :)
     
  5. What a qreat twist to speghetti. I really enjoyed this alot. It's very helpful that you added the directions for reheating after freezing, that is exactly what I did. Thank you for sharing this great recipe.

  1. This was much better than I expected. I only used 1 cup of water & I subbed a can of rotel for 1 can of green chilies.I also used a mexican blend cheese. I will make again soon. Thanks!
     
  2. I am always on the lookout for great OAMC recipes and this is a great one! I had to use linguine instead of spaghetti and I also added some chopped red and green peppers and just plain canned corn. We ate one casserole last night and the other one will be waiting in the freezer. Thanks for posting.
