I substituted sausage for the beef and only used half. The spicy tomatoes combined with the seasoning mix really kicked this up a notch. Super easy recipe with ingredients you have on hand. Will definitely make this one again, and that doesn't happen very often. I will say I did not cook this that long, and even though I made it much quicker it was still fantastic. I also drained and rinsed everything although the recipe didn't call for it.

  1. Brown the ground beef and onions in a large skillet. Drain the excess fat and transfer the browned beef and onions to a large slow cooker or a stockpot.
  2. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove.
  3. To serve, place a few corn chips in each bowl and ladle soup over them.
  4. Top with sour cream, cheese, green onions, and jalapenos.
