  • Preheat oven to 350°F.
  • Cook potatoes in boiling salted water until tender, about 20 minutes.
  • Drain potatoes and mash as usual.
  • Heat 1 tablespoons butter in saute pan; add onion, and saute for 5 minutes.
  • Add ground beef, and cook until beef is lightly browned; drain off any excess fat.
  • Add taco seasoning mix and cook as per package directions.
  • Remove from heat.
  • Place meat mixture into ovenproof casserole.
  • Cover with corn.
  • Cover with mashed potatoes.
  • Sprinkle with grated cheese.
  • Bake at 350 degrees for 30 minutes, or until potatoes are light golden.
  • Serve.

  1. I made three individual casseroles from the recipe but found the proportions of potato to burger not right for us. We all would have preferred a thicker potato crust but that's a personal thing.
     
  2. This was good, but not great. My husband wanted a little something more to it. I would probably make it again but maybe tweak it somehow. Thanks for the recipe though and the opportunity to try something you created. So cool!! I also used instant potatoes. Added some salsa to the meat to avoid having to cut up onions. :-)
     
  3. We ate the whole thing for lunch. Guess we own't be having much dinner. This is awesome. So much flavor, so easy to make. I divided prep in half because I've been too sick to cook. As a result, the meat mixture sat overnight in the fridge. I wonder if this helped meld the flavors even more as that seems to be the case with these kinds of spices. I used instant mashed potatoes the next night....no problem at all. In addition, I cooked the onion with the ground beef, eliminating 1T. of fat and a step in prep. It's the only Shepard's Pie I've ever wanted second helpings on.

  5. It was very easy to make and tasted very good. I used extra lean beef and more onions than the recipe called for and it was really good. It's not very spicy so next time I will add some extra hot sauce.
