Taco Mac & Cheese

"I came up with this recipe on a night when I was super exhausted after work but wanted to at least attempt to cook something for dinner. This is quick, easy, and delish!"

ingredients

  • 205.53 g Kraft macaroni and cheese (1 box)
  • 59.16 ml butter
  • 59.14 ml skim milk
  • 453.59 g extra lean ground beef
  • 35.43 g taco seasoning (1 packet)
  • 14.79 ml louisiana hot sauce
  • 14.79 ml butter (seperate from the first 4)
  • 236.59 ml water
  • 236.59 ml reduced-fat cheddar cheese (shredded)

directions

  • Make box of macaroni and cheese as directed.
  • Meanwhile, brown ground beef and drain.
  • Add taco seasoning/water.
  • Simmer meat mixture for 5 minutes.
  • While simmering, add 1 tbsp hot sauce and 1 tbsp butter. Mix well.
  • Drain meat.
  • Add meat to macaroni and cheese, mix well.
  • Add shredded cheddar cheese, mix gently 'til melted.
  • Serve! YUM!

  5. This was so easy to make. I wasn't sure what to make for a quick dinner. I am in the middle of holiday baking and this was a quick fun, fresh meal that can be made with items I had at hand. I made it with lean ground turkey. Great recipe Megs. I definitely will make this again and I highly recommend this recipe. It is very good.

Tweaks

  1. Super easy recipe made simpler... Brown the ground beef, drain. Add pasta to the beef and 2 cups of hot water. Mix in all the remaining ingredients except grated cheese and cover. Pasta absorbs all the liquid and saves you an additional messy dish.
     
  2. I liked how easy this was to throw together! My son's a hot sauce kinda guy, and he LOVED it! I can tell this will be a regular meal in our house. We used Velveeta instead of cheddar cheese though, and it came out great.
